With a windchill of 20 degrees and snow on the way, I dream of being on a tropical beach in the Caribbean .Since that is not going to happen, a tropical fruit blend with coconut milk and rum is the next best thing. These tropical flavors make dreaming of warm island breezes and beautiful sandy beaches seem possible.
Ingredient
1/2 cup light coconut milk
1/2 cup rum
1 cup diced fresh pineapple, frozen
1 cup diced mango, frozen
1 banana, frozen and sliced
Combine the coconut milk and rum in a blender. Add pineapple, mango and banana. Blend until smooth.
Serves 2
