Enrich Your Picnic Lunch with a Prosciutto and Fig-Jam Sandwich

After a long cold and bitter winter, a day outside is exhilarating. Finding a place to escape to a picnic lunch is a luxurious way to unwind and spend some down time. Rather than packing the traditional picnic sandwich, try a Prosciutto and Fig-Jam Sandwich, a delicious twist on the picnic sandwich. The sweetness of the jam, the saltiness of the cheese and prosciutto, along with the peppery bitterness of the arugula make each bite of this sandwich explode with flavor. Enjoy!

Ingredients
1 large baguette or soft Italian loaf
Fig Jam
4 ounces prosciutto, thinly sliced
4 ounces Asiago cheese
1 small bunch arugula, washed well and dried

Method
Cut baguette into four 5-to-6-inch-long pieces, split each piece horizontally.Spread all bread halves with fig jam, layer bottom halves with prosciutto, cheese and arugula. Fold halves together and serve.

Note: For extra crunchiness and texture, toast the baguette before assembling.
