This refreshing and easy to make mocktail is perfect for any celebration or party setting. Its invigorating juicy flavors will impress your guests and they will request it for your next party.
Kiwi & Mint Capri

Fern Green
Ingredients
1 kiwi, peeled and diced, reserving 1 slice,
to serve
1/2 tablespoon granulated sugar
4 mint leaves, torn
juice of 1 lime
2 oz coconut water
ice
sparkling water
Equipment
large tumbler, muddle
Method
Put the diced kiwi, sugar and mint leaves into the glass. Muddle together until the kiwi has become a coarse purée. Add the lime juice, coconut water and ice. Top with sparkling water and stir. Add a straw and a slice of kiwi to serve.
