With winter finally over, I can now relax and stop worrying about driving on slick icy roads and falling on black ice. I am so happy spring is here; the forsythias are in full bloom, birds are chirping and the thermometer is inching towards 60 degrees. However spring is when I begin to worry about muffin tops and bat wings and whether I am going to be able to slip into my spring and summer clothes. I have decided not to worry about those things this spring but to workout, eat healthy food and enjoy the beauty of the season. I am starting the season with one of my favorite healthy foods: a simple kale salad, the ultimate delicious salad packed with flavors and textures. Kale Salad and crunches: it's a good thing.

Ingredients
1 bunch kale leaves, chopped
1/2 half cup grated parmigiana cheese
8 scallion spears
1/2 cup currants
1/2 cup pine nuts
1/8 cup lemon juice 9 (about 1/2
a medium sized squeezed lemon)
1/4 cup olive oil
salt and pepper

Combine the above ingredients and toss. Enjoy!
