blt wrap

I have a warm and loving memory of sharing a blt on white toast with my mother. She did not make this sandwich often, but when she did, it was a such a treat. Her sandwiches, packed with iceburg lettuce, juicy ripe tomatoes, and crispy bacon, were seasoned to perfection with salt. Because my mom did not like pepper or mayonnaise, she did not add them to the sandwich. This lovely memory is perhaps why I usually order a blt when I go to a diner for lunch. Like my mother, I do not make them enough. When I do, I take time to enjoy this wonderful sandwich and the special times my mother and I shared a blt.

Spread a flour tortilla with a  thin layer of mayo or softened cream cheese. Place 2 strips of cooked applewood-smoked bacon in a horizontal line across the center of the tortilla. Top the bacon with chopped romaine lettuce and chopped tomato. Roll up the tortilla into a tight cylinder, either hand-roll or burrito style.

Note: The blt wrap is a wonderful twist to the classic blt sandwich and fun to make with your children.
