Hot Cross Buns Bread Pudding

 It is said some of the best recipes come from loving memories...

When I was a child, my mother would give us hot cross buns as a treat during Easter time. Although it was a sweet and tasty treat, my favorite memory of the hot cross buns was my mother singing the lyrics of Hot Cross Buns in the background. I am sure it was because of her singing that I like hot cross buns. 

This Easter, I decided to make Hot Cross Buns Bread Pudding. I am certain my mother would like this recipe and would be singing Hot Cross Buns.

                                                                   Hot Cross Buns Bread Pudding

Ingredients

4 cups hot cross buns, cubed

1/4 teaspoon cinnamon

1/8 teaspoon freshly grated nutmeg

4 tablespoons brown sugar 

4 large eggs 

2 cups half and half

3 tablespoons brandy

pinch of salt

confectioners sugar, optional

Directions

Preheat oven to 350 degrees F. Grease a 2 quart baking dish.

Place the cubed hot cross buns in the baking dish.

Whisk the the eggs, half and half, cinnamon, nutmeg, pinch of salt, and brandy together. Pour mixture over the hot cross buns and let sit for 15 minutes.

Sprinkle brown sugar over the top. Cover with foil and bake for 40 minutes. Bake for another 10- 15 minutes uncovered. Let stand 10 minutes. Dust lightly with confectioners sugar and serve while warm.
