Grilled Tomatoes

With tomatoes in abundance during the summer, I like to serve them in as many ways as possible. One of my favorite ways to serve them is grilled. Grilling tomatoes brings out the sweetness of this luscious summer fruit. Paired with the saltiness from the freshly grated Parmesan cheese, sweetness from the basil, and the mild flavor of the garlic, Grilled Tomatoes are the ultimate side dish to complement any summer meal.

                                                                            Grilled Tomatoes

Ingredients

2 firm ripe tomatoes, cut in half

2 tablespoons olive oil 

1 clove garlic, crushed

fleur de sel

freshly ground black pepper

freshly grated Parmesan cheese

4 basil leaves, chiffonade

Directions

Heat a charcoal or gas grill to 375 degrees F.

In a small pan, add olive oil and crushed garlic. Cook until garlic is golden brown, remove from heat, discard garlic.

Cut your tomatoes in half crosswise, season with salt and pepper, and brush the cut half with the garlic infused olive oil.

Lay the tomatoes oil-side-down on the preheated grill. Grill for 5 minutes.

Brush the other side with the infused olive oil. Turn the tomatoes over and grill for 5 more minutes.

Using a spatula or tongs, transfer the tomato halves to a serving plate. Drizzle the tomatoes with the remaining garlic olive oil. Sprinkle with fleur de sel, freshly grated Parmesan cheese, and basil.
