Lemon Sugar Cookies

These delicious cookies are soft and chewy, with the perfect amount of citrus flavor to brighten up any day.

Lemon Sugar Cookies are so easy to make; you will find yourself making them often for your family and friends.

                                                                Lemon Sugar Cookies

Ingredients

1 cup unsalted butter, softened

1 1/2 cups granulated sugar

1 egg

1 teaspoon vanilla extract

zest of two lemons

juice of lemon

2 1/2 cups flour

1 1/4 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

sanding sugar

Directions

Preheat oven to 350 degrees F. Line cookie sheets with parchment.

In a large bowl, cream together butter and sugar until light and fluffy. Add eggs, vanilla, lemon juice, and lemon zest. Stir to combine.

Stir together flour, salt, baking powder, and baking soda. Add to wet ingredients and mix until combined.

Place cookie dough onto baking sheet, spacing 2 inches apart, lightly press each cookie down with the bottom of a glass. Sprinkle with sanding sugar.

Bake for 10-12 minutes or until golden brown.
