Chunky Guacamole

Chunky Guacamole is luscious, creamy, and delectable dip and full of bright flavors and sublime textures. This delicious dip is ready in just minutes and is the perfect dip to serve for any occasion.

Ingredients

2 ripe avocados, not mushy but ripe, 

   flesh cut into 1/2-inch cubes

6 ounces cherry tomatoes or heirloom tomatoes, 

   chopped

1 small (sweet) green pepper, finely chopped

2 scallions, finely chopped (white and green parts)

1/4 cup minced fresh cilantro, plus fresh cilantro sprigs

   for garnish

about 1/2 jalapeno pepper, minced

1 1/2 tablespoons olive oil

juice one lime

salt

freshly ground black pepper

hot pepper sauce

Directions

In a medium bowl, gently mix together the avocados, tomatoes, bell pepper, scallions, minced cilantro, jalapeno to taste, oil, and lime juice. Add salt, pepper, and hot sauce to taste. Serve cold or at room temperature., garnish with cilantro sprigs.

You can serve it in a bowl, but it is extra special if you fill a 2-inch biscuit cutter with the guacamole and then remove the cutter for a perfectly rounded individual serving.
