Matzo Avocado Toast
one avocado
one sheet of matzo
kosher salt
freshly ground black pepper
olive oil
egg
Directions
Cut the avocado in half and remove the flesh from the skin. Mash in a small bowl and season to taste.
Spread the mashed avocado over the matzo.
Heat a small frying pan over low heat and drizzle with olive oil. Crack an egg in a ramekin and slowly pour the egg into the heated frying pan. Cook over low heat until the white is set.
Top the avocado matzo with the egg and season with salt and pepper. Serve immediately so the matzo remains crispy.
