Blueberry Muffins
Ingredients
2 cups all-purpose flour
1 cup granulated sugar, plus 1 tablespoon for muffin tops
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1/2 cup melted butter
1/2 cup milk
1 teaspoon vanilla extract
1 pint fresh blueberries
Directions
Preheat the oven to 400 degrees F.
Prepare a muffin pan with muffin liners.
In a large bowl, sift together 2 cups flour, 1 cup sugar, baking powder, and salt.
In a medium bowl, whisk eggs until smooth. Add the milk, melted butter, and vanilla. Whisk until combined. Add the wet ingredients to the dry ingredients and stir until combined. Fold in blueberries.
Divide the batter into the lined muffin cups, filling about 1/2 full.
Sprinkle 1 tablespoon of granulated sugar over the tops of the muffin batter.
Bake for 18-22 minutes, until an inserted toothpick comes out clean.
Cool for several minutes before removing from the muffin pan.
