Mediterranean Salmon an Papiollote.

With school about to start, I want to make healthy dishes that are flavorful and take little time to prepare. Another want I have is that clean is effortless. Mediterranean Salmon en Pappiolote meets all my requirements!  With its tender and flakey salmon and luscious Mediterranean flavors, it is the ultimate dish to make any night, especially on a busy school night. 

                                                                      Mediterranean Salmon 
                                                                       en Papiollote


Ingredients
4 ounce salmon fillet
8 cherry tomatoes, halved
Kalamata olives, halved
1 tablespoon capers
1 garlic clove, minced
1 teaspoon lemon zest
parsley
kosher salt
freshly ground black pepper

Directions
Preheat oven to 350 degrees. 

Fold a large piece of parchment paper (about 15 by 16 inches) in half to crease it; open and lay it flat.

On one side of the crease, place the salmon in the center. season with salt and pepper. Surround the salmon with the cherry tomatoes and Kalamata olives. Top with capers, lemon, minced garlic, and parsley. 

Fold the parchment over the salmon, make small overlapping pleats to seal the open sides and create a half-moon shaped packet. Place the packet on a rimmed baking sheet; bake for 15 to 17 minutes, until the salmon is opaque.

To serve, place the packet on a plate, make a slit in the parchment packet and open.
