I ended the year eating healthier and losing weight, so it seems fitting to begin the new year in the same way. What better way to start the year than with a healthy snack of crispy roasted garbanzo beans? They are delicious as a snack, can be tossed in salad in place of croutons or used as a garnish for hot simmering soup.
Crispy Roasted Garbanzo Beans

Ingredients
1 tablespoon extra virgin olive oil
1/4 cup freshly grated Parmesan
2 tablespoons garlic powder
1/2 teaspoon sea salt
1 tablespoon onion powder
1/4 teaspoon basil
1/2 teaspoon dried oregano
1/4 teaspoon cayenne
1/2 teaspoon freshly ground black pepper
two 15-ounce garbanzo beans
Preheat oven to 400 degrees F. Lightly spray a baking sheet with canola spray.
Combine the olive oil, Parmesan, garlic powder, salt, onion powder, basil, oregano, cayenne and pepper in a large bowl.
Rinse and drain the garbanzo beans well and pat dry. Add the beans to the Parmesan mixture and toss together until well coated.
Spread the beans evenly on the baking sheet and roast for 1 hour to 1 1/4 hours, stirring every 15 minutes, or until golden brown and crunchy.
