Waffling with Waffles...Brunch with Nico

A few years back, my grandson Nico gave me How to Cook Everything Simple Recipes for Great Food by Mark Bittman. Mark Bittman demonstrates how to make amazing food for every occasion using easy techniques and fresh ingredients.

Nico spent the weekend with me and we decided to cook something from How to Cook Everything. With more than 1.500 recipes, it was difficult to pick just one. We settled on waffles for brunch, yet  we waffled which ones to make. We finally decided we would make two different waffles, Quick and Easy Waffles and Bacon Waffles.

Ingredients
Canola or other neutral oil for the waffle iron
2 cups all-purpose flour
1/2 teaspoon salt
2 tablespoons sugar
3 teaspoons baking powder
1 1/2 cups milk
2 eggs
4 tablespoons butter, melted and cooled
1 teaspoon vanilla extract (optional)

Brush the waffle iron lightly with and preheat it.

Combine the dry ingredients. Mix together the milk and eggs. Stir in the butter and vanilla (if you are using it). Stir the wet ingredients with the dry ingredients. If the mixture is too thick to pour, add a little more milk.

Spread a ladleful or so of batter onto the waffle iron and bake until the waffle is done, usually 3 to 5 minutes, depending on your iron. Serve immediately or keep warm for a few minutes in a low oven.
                                       
                                                           Bacon Waffles
                                                         A Quick Variation

                                                             
Lay two or three strips of bacon over the batter after spreading on the waffle iron before closing the lid.The bacon will cook along with the waffles; cooking time may be a minute or two longer.


Nico and I liked both the plain waffle and the bacon one but our favorite was the bacon. As Nico put it, "The bacon one was amazing, trust me!"

It is always such a treat to cook with Nico. I look forward to the next time we cook together.
