1/2 teaspoon pure vanilla extract

Preheat oven to 350 degrees F. Line baking sheets with parchment paper and lightly coat with cooking spray.
Put butter and sugar in the bowl of an electric mixture fitted with the paddle attachment. Mix on medium speed until crumbly. Add eggs, vanilla, lemon zest and salt. Mix until pale, about 1 minute. Mix in baking powder and then oats. Let batter stand 10 minutes to thicken.

Drop batter on prepared sheets, using 1 teaspoon per cookie and spacing rounds about 3 inches apart. Using the back of the spoon, gently press each round into a circle.
Bake until golden and lacy, about 9 minutes. Slide parchment with cookies onto a work surface. Let cookies cool completely. Gently remove cookies from parchment. Cookies can be stored in an airtight container up to 3 days.
