Bring water to a boil; stir in salt and couscous. Remove pan from the heat, cover, and let stand 5 minutes.
Transfer couscous to a bowl and break up clumps. Let cool.

1 small red onion diced
2 small cucumbers, peeled if waxy, seeded
and diced
2 ripe tomatoes, seeded and diced
1/4 cup currants (optional)
1/2 cup chopped flat leaf parsley (optional)

1/3 cup extra virgin olive oil
1 small garlic clove, grated
1/ teaspoon honey
1 teaspoon Dijon mustard
1/4 teaspoon sea salt
freshly ground pepper
Directions

While the couscous is cooling, in a small bowl, whisk together lemon juice, garlic, honey, and pepper. Add the olive oil and mix until emulsified.
Toss couscous with red onion, tomatoes, cucumbers, currants, and parsley. Add dressing and mix well.
