Clafoutis Aux Framboises - Raspberry Clafoutis


Raspberries are perhaps my favorite summer fruit, so I am always looking for recipes to enhance their beauty and deliciousness. Clafoutis Aux Framboises, with its creamy filling and hint of Chambord, highlights the luscious taste and wonderful texture of the raspberry. This clafoutis is simple to make and a most delectable summer dessert. Enjoy with a dollop of fresh whipped cream or a scoop of vanilla ice cream.

Ingredients:
Pastry dough
2 cups fresh raspberries, unwashed
3/4 cups sugar
4 eggs
1 cup Devon cream or 45% cream
2 1/2 tbsp Chambord

Blind bake the tart shell.
Arrange the raspberries in the bottom of the tart shell.
In a bowl, whisk together the sugar and eggs. Whisk the cream and Chambord.
Pour the mixture over the raspberries and bake in a 350 degree F. oven for 20-30 minutes.
