Roasted Salmon with Avocado and Grapefruit Salsa

Like most everyone else, I work long hours. The last thing I think of doing after work is cooking. I feel I have exhausted the take out menus and I don't always want to go to a restaurant that might be crowed or noisy. So tonight I made Roasted Salmon with Avocado and Grapefruit Salsa. Made with fresh and healthy ingredients,  this dish is easy to prepare and ready in 20 minutes. Serve with rice pilaf and a chilled Riesling, kick back and enjoy a nice quiet evening at home with a good friend.

Ingredients
3/4 pound wild salmon fillet
Olive Oil
Coarse kosher salt and  Freshly ground pepper
Ancho chile powder
1 large grapefruit
Small, firm but ripe avocado
   pitted, peeled, and cubed
large jalapeño pepper
   1/2, seeded, minced
Red onion
   3 tablespoons minced
Fresh cilantro
   2 tablespoons minced
1 tablespoon fresh lime juice

Preheat the oven to 375 degrees F. In a small baking pan, place the fish. Brush on both sides with olive oil. Sprinkle with salt and pepper. Sprinkle with salt, pepper, and ancho chile powder. Place in the oven and roast until almost opaque in the center, about 18 minutes.
Meanwhile, using a sharp knife, cut off the peel and all of the white pith from all around the grapefruit. Working over a small bowl, use the knife tp cut between the membranes to release the grapefriuit segments into the bowl. Squeeze the juice from the membranes ito the bowl. Remove the grapefruit segments from the bowl and cut crosswise into 1/2 inch pieces; return to the bowl. Gently mix the avocado, jalapeño, onion, clantro, and lime juice. Season the salsa to taste with salt and pepper.
Cut the fish in half and divide between 2 warmed plates. Spoon the salsa over the top and serve right away.
