Feta and Artichoke Pizzetta

I love artichokes; whether they are dipped in butter, braised, fried, marinated or incorporated into a dip. One of my new favorite ways to eat artichokes is baked in a pizzetta with feta cheese.  Enjoy it with a Greek garden  salad and a chilled glass of Retsina. This flavorful meal will make dreams of dining in Greece on a beautiful spring day seem possible.

                                                         Feta and Artichoke Pizzetta

Ingredients
1 small pizza crust (8" in diameter)
2 ounces feta cheese crumbled
1 teaspoon olive oil
1 marinated artichoke,  thinly sliced
1 tablespoon fresh oregano leaves
2 tablespoons lemon juice

Directions
Preheat the oven to 425 degrees F. Place pizza crust on baking sheet.

Combine 1 tablespoon of the cheese with oil. Spread pizza base with cheese paste; top with artichoke then sprinkle with remaining cheese.

Bake about 8 minutes.

Serve pizzetta sprinkled with oregano and lemon juice.
