Salade Savoyarde avec une Vinaigrette de Noix

I love a delectable salad and some of the most delicious salads I have had were in France. This well-dressed salad is enriched by the sweetness from the apples and the peppery radishes and the raw textures of the walnuts and of the vegetables. Salade Savoyarde served with a loaf of crusty bread and a chilled glass of wine is the perfect meal for a warm summer day. Bon appétit!

                                 Chunky Savoie Salad with a Walnut Vinaigrette

Ingredients 
1/2 cup walnuts
3 1 / 2 tbsp sunflower oil
2 tbsp white wine vinegar
Pinch of salt
1 small head of leafy lettuce, washed,
   dried, and roughly torn
10 radishes, thinly sliced
1 apple, cubed
1 small cucumber, cut in ribbons
4 strips of bacon
2 thick slices of bread, cut into
   1 / 4-inch squares
3 1 / 2 oz Beaufort cheese or other
   strongly flavored cheese, shaved
Salt and freshly ground black pepper
Crusty bread to serve

Directions
In a small sauté pan over medium heat, toast the walnuts. Chop them finely and combine with the oil, vinegar, and salt in a large serving bowl.  Add the lettuce, radishes, apple, and cucumber to the vinaigrette and toss.

In a large sauté pan over medium heat,  fry the bacon and bread until golden.  Sprinkle the mixture on top of the salad along with the cheese. Toss together and season with salt and pepper. Serve immediately with some crusty bread.
