Gluten-Free Apple Cinnamon Muffins


Although I like cooking alone, I love cooking with children; especially my two oldest grandsons. On a recent visit, we decided to make their mom gluten-free Apple Cinnamon Muffins. One mixed the dry ingredients while the other mixed the wet ingredients. Together we combined and mixed both the wet and dry ingredients. Before giving the apple cinnamon muffins to their mom both boys had to have one. They were delighted with the outcome of their muffins and proud to give them to their mom.

Ingredients
2 cups gluten free flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/ 2 teaspoon salt
2 large eggs
1/ 2 cup agave sweetener
1/ 3 cup sunflower oil
1/ 2 cup milk or dairy
   alternative
1 teaspoon vanilla extract
1 cup applesauce

Preheat oven to 350 degrees F.  Grease or line muffin pan. In a medium bowl combine gluten free flour, baking soda, cinnamon, and salt. In a separate bowl, whisk eggs, agave, oil, milk, and vanilla extract and stir into flour mixture just to combine. Stir in applesauce. Scoop batter into muffin pan. Bake for 18- 20 minutes.  

Yields 18 muffins.
