Shaved Zucchini Salad with Macadamia Nuts

Shaved Zucchini Salad with Macadamia Nuts packs a punch with its savory, citrus, and salty flavors along with its wonderful textures. This  amazing side dish is  so delicious,  light and healthy. Eat this salad and you may not feel so guilty when you indulge this summer.

Ingredients
1 tsp. finely grated lemon zest
3 Tbsp. fresh lemon juice
3 Tbsp. olive oil
1 tablespoon Dijon mustard
1 tsp. honey
1 tsp. soy sauce
Kosher salt, freshly ground pepper
1 1/2 lb. mixed zucchini and summer
   squash, thinly sliced
2 cups baby sorrel leaves or other
   small greens
3 Tbsp. unsalted, roasted pumpkin seeds
1/2 oz. Parmesan, finely grated
1/3 cup unsalted,  roasted macadamia
   nuts, coarsely chopped

Directions

Whisk lemon zest, juice, oil, mustard, honey, and soy sauce in a large bowl; season with salt and pepper. Add zucchini and squash, sorrel, and pumpkin seeds and toss to combine. Serve salad topped with Parmesan, macadamia nuts, and more pepper.
