A Passion For Guacamole

Guacamole is perhaps my favorite condiment. With its versatility,  it can enhance any dish - such as tacos, hamburgers, huevos rancheros or it can be sublime on its own with your favorite tortillas. Palomino's Guacamole takes just minutes to make and is delicious. The flavors from the ingredients blend together beautifully the perfect making it the perfect party dish.

Ingredients
4 ripe California avocados,  pitted, 
   peeled,  and coarsley chopped
Juice of 1/2 lime
1 medium red onion,  diced
2 red beefsteak tomatoes,
   finely diced
1 teaspoon Tabasco
1 teaspoon kosher salt
1/4 cup chopped cilantro leaves

In a large glass or ceramic bowl,  combine the avocados and the lime juice.  Use a fork to mash the two together (you can still have chunks,  but it still should be smooth for the most part). Stir in he onion,  tomatoes,  Tabasco,  salt, and cilantro. Mix well.  Spread immediately on your favorite tortillas or cover tightly and refrigerate for up to 1 day.
