Although I am an adventurous eater, I grew up with picky eaters. Because of this, I realize not everyone goes for the exotic and sometimes spicy dishes. When I entertain, along with my planned menu I always have a mild flavored dish, such as Vermont White Cheddar Mac. This satisfying and delicious dish is the perfect comfort food for even the pickiest of eaters. Easy to make, Vermont White Cheddar Mac is a great addition to your party or is an ideal dish for a cold winter's night.
Vermont White Cheddar Mac

Ingredients:
1/2 pound dried elbow pasta
2 cups béchamel
2 cups grated sharp, aged
Vermont white Cheddar
cheese

1. Cook all the pasta in salted boiling water until a little less than al dente. Drain, rinse with cold water, and drain the pasta again.
2. Add the sauce and cheese to a large, heavy-bottomed pot and cook over medium heat. Stir until the cheese is barely melted, about 3 minutes. Slowly add the cooked pasta, stir , and continue cooking while stirring continuously until the dish is nice and hot, another 5 minutes.
3. Spoon into bowls and enjoy!
