Chinese Chicken Salad with Quinoa

Hosting virtual lunches can be a bit challenging. This includes deciding on the right recipe or coming up with something besides the typical mundane quiche and salad. I tend to look for a unique and memorable recipe, such as Chinese Chicken Salad with Quinoa. This delectable and delicate salad, with its sublime and subtle flavors and perfect textures, is both satisfying and healthy.  So easy to make and scrumptious, Chinese Chicken Salad with Quinoa is ideal for lunches, picnics and dinners.

Ingredients
1/2 cup quinoa  (red or regular)
2 boneless, skinless chicken breasts
2 Tbsp. toasted sesame oil
2  Tbsp. rice vinegar
1 tsp. low-sodium or gluten-free soy sauce
1 tsp. agave syrup
1/2 tsp. minced garlic
1/4 cup sliced celery
1/4 cup chopped scallions
1/4 cup sliced almonds 

Directions
Cook quinoa as directed on package. 

In a medium pot, cover chicken with water by 1" and season generously with salt. Bring to a boil over high heat; reduce to a simmer and cook 5 minutes. Cover and remove from heat; let stand until chicken is cooked through,  about 12 minutes. 

Remove chicken to a plate, let cool, and slice. 

In a large bowl, whisk together oil, vinegar, soy sauce, agave, and garlic. Add quinoa.
