...getting them to like the food is a totally different matter, definitely not always so easy.
I was lucky that when my children Kristin and Patrick were little, they loved cooking with me and enjoyed a wide variety of food, especially from other countries.
The past several years I have been working with children. Many of them will eat only pizza, plain pasta or chicken nuggets. I decided a fun way to introduce them to new food would be to "travel" the world and discover the different foods, customs and cultures of other countries. It seemed to work - their favorite countries are Mexico, Italy and China. As of now, Cheesy Quesadillas being their favorite food to make and eat. Each meal has become an adventure which they eagerly look forward to cooking and trying. These journeys have been as much fun for me as for them. Looking forward to our next destination!
Cheesy Quesadillas

Ingredients
Pat of butter
1 flour tortilla
1/4 cup grated cheese,
such as Monterey Jack
Salsa Fresca
Pat of butter

Directions
1. In a skillet, melt the butter over medium heat.

2. Set the tortilla in the skillet and sprinkle half with the grated cheese. Fold the other half to form a half of a circle.
3. Cook for about 2 minutes or until tortilla browns. The, use a spatula to flip over. Cook for another 2 minutes or until it browns. If you want, you can dip the quesadilla in salsa.
Note: I spread the cheese over the entire tortilla and topped with another tortilla. Once done, I garnished the quesadilla with Salsa Fresca and sour cream.
