String Beans with Sun-Dried Tomatoes

Susan Lawrence is a delightful gourmet shop located in Chappaqua, New York. One of their most popular side dishes is String Beans with Sun-Dried Tomatoes. The crispness of the string beans and the delectable flavors of sun-dried tomato dressing will enhance any meal.

String Beans
1 1/2 pounds fresh green beans
6-8 quarts rapidly boiling salted water
2-3 trays of ice

Dressing
1 1/2 cup sun-dried tomatoes in oil,
   chopped
1/4-1/2 cup olive oil
1 tablespoon lemon juice
1 clove garlic, finely minced
Salt and pepper to taste 

Directions
1. Wash and drain beans. Snap off the stems and pull down to remove string.

2. Drop prepared beans into boiling water. Boil uncovered 2-3 minutes, just cooked through but still crunchy. 

3. Immediately drain. Cover with cold water and add ice cubes. When beans are thoroughly cooled, drain again.

4. Toss with dressing and serve. 

Dressing
Combine all ingredients.
