Deviled Eggs for a Honey Bunny
Ingredients
6 large eggs
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1/8 teaspoon salt
freshly ground white pepper
smoked salmon, cut into small carrot shapes
tarragon leaves
Directions
Place eggs in a single layer in a saucepan; add water to one inch above the eggs. Bring to a boil; cover and let stand for 12 minutes.
Drain immediately and fill the saucepan with cold water and ice. Peel under cold running water.
Slice eggs in half lengthwise, and remove yolks. Blend the yolks with the mayonnaise, Dijon mustard, salt and pepper. Spoon the yolk mixture into egg whites. Garnish with the tarragon leaves and smoked salmon.
