With kale in abundance at the farmers' market, I decided to make an elegant and simple salad to impress. I wanted a light vinaigrette to intensify the beauty and flavors of my salad. Vinaigrette aux Herbes was the perfect vinaigrette; its bright and fresh flavors enhanced this magnificent spring salad.
Vinaigrette aux Herbes

Ingredients
1 clove garlic, minced
Generous amount of mixed fresh herbs; flat-
leaf parsley, basil, chives, tarragon
3 tablespoons red wine vinegar
2 tablespoons Dijon mustard
1 teaspoon sugar
2/3 cup olive oil
Sea salt, to taste
Freshly ground black pepper, to taste

leaf parsley, basil, chives, tarragon
3 tablespoons red wine vinegar
2 tablespoons Dijon mustard
1 teaspoon sugar
2/3 cup olive oil
Sea salt, to taste
Freshly ground black pepper, to taste
Directions
Place the garlic in a medium bowl. Remove the herbs and chop finely. Add to the bowl with the vinegar, mustard, and sugar and mix well. Slowly pour in the olive oil, mixing all the time with a whisk or a handheld blender. When all the oil is blended, add the salt and pepper.
