Candied Bacon S'Mores

Last night after grilling sliders, Nico, Luka and I decided to make Candied Bacon S'Mores for dessert. Before assembling the s'mores, we sampled the candied bacon and it was delicious! As Luka put it, "perfection!". Then we made and ate the s'mores. Nico commented the candied bacon would be a delicious appetizer by itself, however was too sweet for the s'mores. Next time we make bacon s'mores, we will use plain bacon.

                                                      Candied Bacon S'Mores

Ingredients
4 jumbo marshmallows
4 2-inch pieces of candied bacon
   (recipe below)
4 graham crackers, halved
4 2-inch squares of chocolate

Roast the marshmallows over a flame until golden brown, puffed and gooey on the inside. Sandwich the warm marshmallow with the candied bacon and chocolate between layers of graham crackers. Serve immediately.

Candied Bacon
Ingredients
1/2 cup granulated sugar
1/2 cup light brown sugar
1 tablespoon cinnamon
12 slices thick cut bacon

Preheat the oven to 375°.  Arrange a wire rack over a foil-lined baking sheet.

In a medium bowl, combine the sugar, brown sugar and cinnamon. Add the bacon slices and coat.

Place the sugar-coated bacon slices on a wire rack and bake, flipping once,  until bacon is crisp and the sugar is caramelized, 25-30 minutes. Leave on the baking rack to cool.

Serve immediately or store in an airtight container in the refrigerator for up to 1 week.
