Burrata with Heirloom Tomatoes and Basil

I love meeting Kristin for brunch. She is up to date with the current food trends and in vogue restaurants. She introduces me to new cocktails, appetizers, entrees and desserts I never tried and perhaps would not think of ever ordering. On one such brunch at Morandi we enjoyed a scrumptious appetizer of burrata cheese, so creamy and scrumptious. Since then, I have been obsessed with this creamy luscious cheese. Last Saturday while roaming through the Chappaqua Farmers Market, I happened upon Joe Tomato Mozzarella's stand where a sweet man was selling homemade mozzarella and burrata. Of course I had to get the burrata and make an appetizer worthy of the one I had with Kristin. I love my brunches with Kristin and am grateful to her for inspiring my choices of what next to make and share.

                                                       Burrata with Heirloom Tomatoes and Basil


Ingredients
burrata cheese
heirloom cherry tomatoes
1/8 cup fresh basil
1/4 teaspoon dried oregano
extra-virgin olive oil
fleur de sel
freshly ground pepper

Directions
Cut tomatoes into wedges and place in a bowl. Sprinkle with fleur de sel and freshly ground pepper. Crush oregano in palms, add to tomatoes. Add a 1/4 cup of basil and olive oil. Let stand for 30 minutes, stirring frequently.

Place burrata cheese in center of plate. Arrange tomatoes around cheese. Drizzle with dressing from tomatoes. Garnish with basil leaves and serve.
