Butternut Caprese

Gorgeous and stunning with its beautiful autumn colors and savory flavors, Butternut Caprese is the perfect side dish for your holiday feast.

1. Peel, cube (1-inch) & roast 1 medium butternut squash with olive oil, salt, & pepper. Roast at 425° F first 25 to 30 min..
2. Combine with 1 cup cherry tomatoes, sliced in half, 1 ripe avocado, 1 cup mozzarella, cubed, and 1/2 cup chopped basil.
3. Dress with olive oil, balsamic vinegar, salt & pepper.
