Ginger Salad Dressing

I have had a love affair with salad for as long as I can remember. It is not so much the salad that I love; it's the dressing. I would douse my salads in dressing.

One night, Nick and I went to Benihana's where I tried the Ginger Salad dressing. It instantly became one of my favorite salad dressing, so creamy, tangy with lovely hints of ginger. I decided to purchase a bottle. Much to my dismay, it did not compare to the luscious Benihana Ginger Salad Dressing I had enjoyed so much. Recently I came across a recipe which comes closer than any ginger bottle dressing. This dressing is so effortless to make; just throw the ingredients in the blender, mix and serve. As long as I have this extraordinary dressing, my love affair with salad will continue for a very long time.

                                                     Benihana Ginger Salad Dressing

Ingredients
1/2 cup minced onion
1/2 cup peanut oil
1/3 cup rice vinegar
2  tablespoons water
2 tablespoons fresh minced ginger
2 tablespoons minced celery
2 tablespoons ketchup
4 tablespoons soy sauce
2 teaspoons granulated sugar
2 teaspoons lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon grounded black pepper

Directions
Combine all ingredients in a blender. Blend on high speed for about 30 seconds or until all of the ginger is pureed. Chill.
