Celebrating with a Mango Margarita

Every year I look forward to celebrating my sweet friend Linda on her birthday. It has become a tradition to start the celebration at my place with a girly cocktail. The challenge for me is to make a cocktail spectacular enough to honor Linda on her special day. This year I  decided on a Mango Margarita; creamy with its sublime tropical flavors and pretty color, it is the perfect birthday cocktail. Cheers and Happy Birthday, Linda! xo

                                                          Mango Margarita

Ingredients
1/3 cup cubed mango
1 1/2 ounces silver tequila
1 ounce Triple Sec
1/2 ounce fresh lemon juice
1 1/2 ounces fresh lime juice
1 tablespoon superfine sugar

Garnish
3 tablespoons sea salt
3 tablespoons superfine sugar
lime wedges

1. Purée the mango in a blender. Add the tequila, Triple Sec, lemon juice, lime juice, sugar, and ice, and blend until thick and slucshy, with no ice chips remaining.
2. To garnish: Combine the salt and sugar in a wide shallow bowl. Moisten the rim of a large glass with one of the lime wedges. Dip the rim in the sugar-salt mixture and turn back and forth to coat; shake off any excess.
3. Pour the mango mixture into the prepared glass.
Makes one cocktail.

Note: To kick it up a notch, for the garnish I replaced the superfine sugar with chile powder.
