Confetti Toffee Matzo Crunch

Confetti Toffee Matzo Crunch is a perfect ending to your Passover Seder. So decadent and easy to make, this treat could be the beginning of a new and wonderful holiday tradition. Happy Passover! 

                                                                 Confetti Toffee Matzo Crunch


Ingredients
2 sticks unsalted butter
5 pieces Matzo
1 2/3 cups dark brown sugar
2 cups good-quality chocolate chips
rainbow sprinkles

Directions
Preheat the oven to 325 degrees F. Line a large shallow baking pan with foil. Arrange a layer of matzo in the pan, breaking it to fit.

In a medium heavy-bottomed saucepan, melt the 2 sticks of butter with the brown sugar over moderate heat. Bring to a boil and cook, stirring constantly, 2-3 minutes. Pour the toffee evenly over the matzo and spread. Transfer the pan to the oven and bake for 15 or until bubbling.

Remove the toffee matzo from the over and sprinkle the chocolate chips on top. Let the chocolate melt, then using an offset spatula, spread the melted chocolate in a thin layer. Top with the rainbow sprinkles. Cool in the refrigerator. Break the confetti toffee into pieces and serve.
