Smoked Salmon Canapés with Herbed Mascarpone Cheese

These little smoked salmon  canapés are as delectable as they are pretty. The saltiness of the smoked salmon complements the pepperiness of the arugula sprouts and the sweetness of the herbed mascarpone cheese. So easy to assemble, these dainty and luscious canapés are a lovely way to welcome spring.

                                                    Smoked Salmon Canapés
                                                                       with
                                                 Herbed Mascarpone Cheese


Ingredients
rye crisp crackers
8 oz. smoked salmon
6 oz. mascarpone cheese
lemon zest (1 lemon)
2 Tbsp. fresh herbs (thyme, rosemary, chives)
freshly ground black pepper
arugula sprouts
pansies for garnish

Directions
Mix the mascarpone cheese, chopped thyme, rosemary, chives and lemon zest, then add freshly ground black pepper.

Place the rye crisp crackers on a serving tray. Spread the herb mascarpone cheese on top of each crisp.

Cut the smoke salmon and place on top of the crisp crackers.

Garnish with the arugula sprouts and pansies.
