I am always searching for a unique and tasty side dish to enhance my summer barbecue. Greek Chickpea Salad with its delectable flavors and sublime textures is the perfect salad to complement any main entrée. Greek Chickpea Salad
lemon vinaigrette
1/4 cup fresh lemon juice
1 1/2 teaspoons dried oregano
Greek Chickpea Salad
Ingredients
2/3 cups lemon vinaigrette
2 15-ounce cans chickpeas, rinse and pat dry
2 cups seedless cucumbers, cut
2 cups cherry tomatoes, halved
1/2 cup Kalamata olives, pitted
1/2 cup feta cheese, crumbled
basil, chiffonade
salt
black pepper
lemon vinaigrette
1/4 cup fresh lemon juice
1 1/2 teaspoons dried oregano
1 large garlic clove, minced
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
3/4 cup extra virgin-olive oil
Directions
Place lemon juice, oregano, garlic, salt and pepper in a bowl. Whisk to combine. While whisking, slowly drizzle in the extra-virgin olive oil. Set aside.
Combine the chickpeas, cucumbers, tomatoes, Kalamata olives, feta cheese, basil, and vinaigrette in a bowl. Toss well and season with salt and pepper.
