Greek Chickpea Salad

I am always searching for a unique and tasty side dish to enhance my summer barbecue. Greek Chickpea Salad with its delectable flavors and sublime textures is the perfect salad to complement any main entrĂ©e. Bursting with flavors, healthy and easy to make, this salad will become a staple for your summer barbecue.

                                                                          Greek Chickpea Salad


Ingredients
2/3 cups lemon vinaigrette
2 15-ounce cans chickpeas, rinse and pat dry
2 cups seedless cucumbers, cut 
2 cups cherry tomatoes, halved
1/2 cup Kalamata olives, pitted
1/2 cup feta cheese, crumbled
basil, chiffonade
salt
black pepper

lemon vinaigrette
1/4 cup fresh lemon juice
1 1/2 teaspoons dried oregano
1 large garlic clove, minced
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
3/4 cup extra virgin-olive oil

Directions
Place lemon juice, oregano, garlic, salt and pepper in a bowl. Whisk to combine. While whisking, slowly drizzle in the extra-virgin olive oil. Set aside.

Combine the chickpeas, cucumbers, tomatoes, Kalamata olives, feta cheese, basil, and vinaigrette in a bowl. Toss well and season with salt and pepper.
