Peas to Please

The addition of bacon, tarragon and lemon brightens up this often underrated legume. Quick and easy to make, this delectable side dish beautifully complements any main entrée.

Ingredients
6 oz. sliced bacon, cut crosswise
   into 1/2- inch pieces
1 large shallot or 1/2 small red onion,
   thinly sliced
1 lb. fresh or frozen English peas
1 Tbs. finely chopped tarragon; more for
   serving
1 tsp. finely grated lemon zest
Kosher salt
freshly ground black pepper
Aleppo pepper or crushed red
   pepper flakes
1 1/2 Tbs. fresh lemon juice

Directions
In a large skillet, cook the bacon and shallot over medium heat, stirring occasionally, until the bacon begins to crisp, about 8 minutes. Remove from the heat. Stir in the tarragon, zest, 1/2 tsp. salt, and a generous pinch each of black pepper and Aleppo. Toss with the lemon juice, top with more tarragon, and serve.
