The Belmont Jewel

Today the horses will gather at Belmont Park to race what should have been the final leg of the Triple Crown, the Belmont Stakes. looking over the crowd of thousands of fans, one will see an array of stunning hats and countless commemorative glasses filled with the Belmont Jewel, the official drink of the race.

The Belmont's official drink was the Belmont Breeze, a labor intensive concoction of bourbon, sherry, orange, lemon. cranberry, 7-up, simple syrup, and soda water. Its delectable mixture became a bit complicated to serve the thousands of fans wanting to enjoy a cocktail while cheering on their favorite horse. So in 2011, an easier to make cocktail, the Belmont Jewel was created. This delicious and refreshing cocktail will keep those fans sipping and happy as they cheer on their favorite horse.

Ingredients

1/5 oz. bourbon

1 oz. lemon juice (about one lemon)

1/5 oz. simple syrup

1 oz. pomegranate juice
Lemon wheel for garnish

Directions
In a cocktail shaker filled with ice, add bourbon, lemon juice, simple syrup, and pomegranate juice. Shake vigorously.

Strain over an ice-filled  into a double old-fashion cocktail glass.

Garnish with a lemon wheel.
