Caramelized Onions

When Nick and I were dating we worked a couple blocks from each other, near Columbia University. We would often met for lunch on Amsterdam Avenue and stroll through the campus to Little Take Home. We ordered a cheese burger with caramelized onions and a bag of french fries and then walk back to the campus for a picnic. The burger oozed with luscious juiciness and the cheese melted down the sides. It was the caramelized onions that turned what might have been an ordinary burger into an extraordinary burger.

                                                              Caramelized Onions

 
Ingredients
4 onions, yellow, white, or red
1 tablespoon olive oil
1 tablespoon butter
1/2 teaspoon salt
1/2 teaspoon sugar
1 teaspoon balsamic vinegar

Directions
Slice the onions.

Heat olive oil and butter in a large sauté pan until the oil is sizzling. Add the onion slices and stir to coat the onions with oil. Add salt, sugar, and balsamic vinegar and stir to coat.

Reduce heat to medium-low and continue to cook onions. Stir the onions every 5 minutes and scrape the bits that form on the bottom of the pan. Continue cooking for 45-50 minutes.
