Apple Pie without the Cheese....

...is like getting a kiss without the squeeze!

Being one of four girls, my mother made sure that we each of her four daughters had special time with her during the week. One of my fondest memories is when I was a little girl she took me to Macy's for lunch. For dessert I ordered an apple pie and much to my surprise it came with a wedge of cheddar cheese. I remember enjoying both the apple pie and the cheese but was baffled by the pairing. As my mother and I were leaving, a sweet older woman approached me and said "Apple pie without the cheese, is like getting a hug without the squeeze."  To this day whenever I make apple pie, I think of the lovely day I spent with my mother and the sweet woman who taught me why we have cheese with our pie.

                                                           Apple Pie


Ingredients
6-7 tart apples, sliced, cored, and peeled
1/3 cup white sugar
2/3 cup brown sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
pinch of allspice
pinch of salt
1 1/2 tablespoon unsalted butter
1 large egg white
additional sugar
2 pie shells - 9"

Directions
1. Preheat the oven to 425 degrees F.

2. In bowl, combine the sugars, spices, and flour. Toss apples with sugar mixture.

3. Line a 9" pie plate with bottom pie shell. Fill with apple mixture and dot with butter. Place the remaining pie shell over filling. Seal and vent.

4. Beat the egg white; brush over crust. Sprinkle with sugar.

5. Bake at 425 for 10 minutes then reduce the temperature to 350 and bake for another 30-35 minutes.
