Peachtree Punch 2.0

When Nick and I were dating, our favorite date night splurge was to go to Trader Vic's and indulge on the rumaki along with one of their famous cocktails. Our favorite was the Peachtree Punch, scrumptious, frothy and almost addictive. We felt bad when Trader Vic's closed; we were able to find places which made rumaki to our satisfaction but the cocktails were not even close to those we had at Trader Vic's. Well, recently I discovered a recipe which is a modern twist on the Peachtree Punch. It is scrumptious and as delectable as the one we enjoyed on our dates at Trader Vic's. I am sure Nick would agree.

Ingredients
1/2 fresh yellow peach, pitted
   and coarsley chopped into cubes (with skin)
3 ounces fresh orange juice
1/2 ounce fresh lemon juice
1 ounce coconut cream
1/2 ounce natural peach liqueur
2 ounces blended light rum
1 ounce seltzer

Garnish
Grated nutmeg and a peach wedge

Add the peach chunks, orange juice, and lemon juice to drink mixer tiny and muddle the peach. Add the remaining ingredients. Fill with 12 ounces of crushed ice and 4 to 6 "agitator" cubes. Flash blend and double-strain into a double old-fashioned glass. Garnish with nutmeg and a peach wedge on the rim of the glass.
