The Ultimate Pumpkin Spice Muffins
Ingredients
1/ 3/4 cups all-purpose flour
3/4 cups granulated flour
3/4 cup brown sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon nutmeg
1/2 teaspoon turmeric
2 large eggs
1 (15 ounce) can pure pumpkin puree
1/2 cup unsalted butter. melted
1 tablespoon heavy cream
1 teaspoon vanilla extract
cinnamon sugar
Directions
1. Preheat oven to 375 degrees F.
2. Line a muffin pan with paper liners or grease with a nonstick spray. Set aside.
3. In a medium bowl, combine the flour, sugar, brown sugar, baking powder, baking soda, salt, and spices. Whisk to combine.
4. In a large bowl, whisk together the pumpkin puree, eggs, unsalted butter, heavy cream, and vanilla extract. Whisk in dry ingredients.
5. Divide into a prepared muffin pan. Sprinkle with cinnamon sugar.
6. Bake 20-25 minutes or until wooden pick comes out clean. Let cool 5 minutes before removing from the pan.
