Chicken Teriyaki Meatballs

Now that the teams have been decided for the Super Bowl, it is time to decide what to serve for Super Bowl Sunday. One appetizer I have chosen is Chicken Teriyaki Meatballs. These meatballs are a crowd pleaser; so saucy and scrumptious, they will become a must have for future Super Bowl parties.

                                                    Chicken Teriyaki Meatballs


Ingredients
for the meatballs
2/3 cup bread crumbs
1 1/2 pounds ground chicken
1 large egg
1 tablespoon minced garlic
2 teaspoons minced fresh ginger
2 tablespoons minced onion
2 tablespoon low sodium soy sauce
1 tablespoon sake
1/4 teaspoon ground black pepper

for the sauce
1 cup water
5 tablespoons brown sugar
1/4 cup soy sauce
1 1/2 tablespoons honey
1 large garlic clove, minced
2 tablespoons fresh ginger, minced
cornstarch

garnish
scallions, thinly sliced
sesame seeds

Directions
Preheat oven to 450 degrees F and line a baking sheet with parchment paper.

In a large bowl, stir together breadcrumbs, ground chicken, onions, garlic, ginger, soy sauce, pepper, honey, sake, and egg. Mix until combined.

Shape the meat mixture into balls. Place on parchment prepared baking sheet. Bake for 18-20 minutes, until cooked through.

While the meatballs are baking, prepare the Teriyaki sauce by combining water, brown sugar, soy sauce, honey, garlic, and ginger in a medium saucepan and set over medium-high heat. In a small bowl, combine the cornstarch and 1/4 cup water, whisk until combine. Add the mixture to the saucepan. Heat until the sauce thickens.

Remove the meatballs from the oven and drizzle with teriyaki sauce, toss to coat. Sprinkle with sliced scallions and sesame seeds.
