Honoring Dr. Seuss on his birthday with these delectable Deviled Green Eggs and Ham one-bite wonders.
Deviled Green Eggs and Ham
Ingredients
12 eggs
1/2 cup mayonnaise
1/4 cup mascarpone cheese
3 1/2 tablespoons pesto
salt
pepper
pancetta
Directions
Place eggs in a single layer in a saucepan. Add water to one inch above the eggs. Bring to a slow boil; cover and let stand 13 minutes.
While the eggs are cooking, bake the pancetta until crispy. once cooled, break into small pieces.
Drain immediately and fill the saucepan with cold water. Peel the eggs under cold running water.
Slices eggs in half, lengthwise, and carefully remove the yolks. Blend the yolks with the mayonnaise, mascarpone cheese, pesto, salt and pepper. Pipe or spoon the yolk mixture into egg whites. Garnish with crisp pancetta.
