The Winter that Wasn't

This has been an unusual winter with its warm temperatures and lack of snow. I am not complaining since I do not like snow nor the cold. In spite of that, it would be nice for children to wake up to a winter wonderland; a snow so fluffy and deep that they could go sledding, have a snowball fight, and make snow angels. 

Although I cannot make it snow, I can make snowflake waffles. These delectable waffles are buttery and crispy on the outside and fluffy on the inside. Sprinkled with a little confectioner's sugar, these whimsical waffles could add a little winter magic to a child's snowless winter!

                                                                            Snowflake Waffles


Ingredients
2 cups all-purpose flour 1/4 cup sugar
1/2 teaspoon salt
11/2 teaspoon baking powder
1/8 teaspoon nutmeg
2 large eggs
1 1/2 cups milk
1/2 cup butter, melted
2 teaspoons vanilla extract
confectioner's sugar

special equipment
snowflake waffle iron

Directions
Preheat waffle iron.

In a large bowl, whisk flour, sugar salt, baking powder, and nutmeg. Set aside.

In a small bowl whisk milk, vanilla extract, and eggs. Pour over flour mixture, and whisk gently to combine, do not overmix. Add butter and gently whisk until smooth.

Pour batter onto the hot waffle iron and cook according to manufacture's instructions. Sprinkle with confectioner's sugar and serve.
