Microwaved Salmon and Asparagus en Papillote

With the heat index in the high nineties and the unbearable humidity, I cannot imagine turning on my oven and heating up my small apartment. Microwaved Salmon and Asparagus en Papilotte is the perfect solution to this problem. So easy to make and cooks to perfection in only three minutes, Not only did my place remain cool, I was able to make a decadent meal in only minutes. Microwaved Salmon with Asparagus en Papilotte, so delectable and healthy, will be my go to meal on a hot  and humid summer night.

                                                Microwaved Salmon with Asparagus
                                                                     en Papillote


Ingredients
4 ounces salmon, 1 filet
thin asparagus
2 slices lemon
fresh dill
extra-virgin olive oil
kosher salt
freshly ground black pepper
dill flower, optional

parchment paper

Directions
Fold a large piece of parchment paper (about 14-15 inches) in half to crease it; open and lay flat. On one side of crease, place 8-10 asparagus. Place salmon over asparagus, drizzle with extra-virgin olive oil, season with salt and pepper to taste. Top with two slices of lemon and dill fronds.

Fold parchment paper over salmon and seal the edges by making small overlapping pleats to seal the open sides and create a half-moon shaped packet.

Microwave on high for 3 minutes.

To serve, place the packet on a plate and cut packet open. Garnish with dill flower.
