Microwaved Salmon, Tomatoes, and Basil en Papillote

Recently I made Microwaved Salmon and Asparagus en Papillote and was so enchanted with how the salmon and asparagus were cooked to perfection. I knew I had to try it again but with different ingredients. This time I decided to celebrate the flavors of summer with tomatoes, basil, and garlic. The flavors from the tomatoes with the aroma from the fragrant basil and garlic created a luscious sauce for the salmon. Microwaving salmon is a so easy to do and the outcome will leave you pleasantly surprised.

                                                                         Basil en Papillote


Ingredients
4 ounces salmon, 1 filet
8 cherry tomatoes, cut in half
fresh basil leaves
garlic clove, sliced
extra-virgin olive oil
salt and pepper to taste

Directions
Fold a large piece of parchment paper in half to crease it; open and lay flat. On one side, layer with salmon filet, tomato halves, and garlic slices. Drizzle with extra-virgin olive oil,  season with salt and pepper to taste. Top with fresh basil leaves.

Fold parchment paper over salmon and tomatoes and seal the edges by making small overlapping pleats to seal the open sides and create a half-moon shaped packet.

Microwave on high for 2 1/2 minutes. Check for doneness and if desired, microwave another 30 seconds. 

To serve, place the packet on a plate and cut the packet open.
