Seahorse Cocktail

Some birthdays stand out more than others. For me it was my fifth birthday. I received a package in the mail from my godmother. It was not a large package, yet intriguing with its red labels of perishable and open immediately. I remember my mother carefully opening the package and to our surprise, it contained a small bag of water with two little seahorses swimming inside. My mother so gently placed them in a bowl and my sisters and I watched them in wonderment.

Since that magical day and extraordinary gift, I have had a fascination and love for seahorses. Recently I purchased a cocktail glass embellished with a seahorse and decided to create my version of the Seahorse Cocktail. I am sure my godmother would have appreciated this whimsical cocktail, delicious and refreshing with summer flavors.


                                                                Seahorse Cocktail


Ingredients
2 1/2 ounces bourbon
juice from 1 Meyer lemon
1 1/2 ounce honey simple syrup (equal parts honey and water)
2 ounces pineapple juice
2 dashes grapefruit or orange bitters
ginger beer

Directions
Combine bourbon, Meyer lemon juice, honey simple syrup, pineapple juice, and bitters in a cocktail shaker. Shake vigorously. Strain into an ice-filled cocktail glass. Top with ginger beer.
