Pan Roasted Pesto Chickpeas with a Kick

I received a gorgeous agate cheese board from my son Patrick, his wife Vanessa, and their son Jakob. I use this beautiful board every chance I get. All foods, including healthy snacks like Pan Roasted Pesto Chickpeas with a Kick, seem much more enticing and delicious when placed on this special board.

                                                  Pan Roasted Pesto Chickpeas with a Kick


Ingredients
1 15-ounce can low sodium chickpeas
3 1/2 tablespoons pesto
small serrano pepper, finely minced
salt to taste

Directions
Preheat the oven to 400 degrees F.

Rinse and drain chickpeas.

In a bowl, mix together the chickpeas with the pesto and serrano pepper. Spread the chickpeas in an even layer on a baking sheet.

Bake, shaking the pan occasionally, until crispy., about 30-35 minutes.
